Biography
Dr. Elsa M. Gonçalves is a researcher at INIAV, with expertise in food science and technology, sensory evaluation, and sustainable food systems. Her work focuses on the development and characterization of innovative and functional foods, with particular emphasis on future foods and forgotten foods, as well as on the application of emerging technologies and innovative packaging solutions to improve food quality, safety, and sustainability. She serves as the Portuguese representative in regulatory groups such as Codex Alimentarius and teaches at several universities as an invited lecturer. She has authored and co-authored numerous peer-reviewed scientific publications and has been involved in national and international research projects. Dr. Gonçalves also contributes to the scientific community through editorial and peer-review activities for academic journals and regularly participates in international conferences.

Biography
Dr. Joao Carlos Martins Barreira has a First degree in Biotechnological Engineering (1996-2001), MSc in Chemistry (2002-2005), PhD in Pharmaceutical Sciences (2007-2010), and Postdoc Researcher (2011-2017). Researcher at Mountain Research Center (CIMO) - Associate Laboratory for Sustainability and Technology in Mountain Regions (SusTEC), author of 154 scientific papers, 29 proceedings, 11 book chapters, 9 invited lectures in scientific meetings, 65 oral communications, and 142 poster communications (hindex = 44). Researcher in 17 funded projects, three as principal or co-principal investigator. Moderator/Chair in 8 Scientific Meetings, Supervisor of 5 PhD students and 10 MSc students, Jury in 11 PhD Thesis and 31 MSc Dissertations, Teacher of 31 curricular units across 36 academic semesters.
